Soft shell crab
1. Deep fry the polenta chunks in hot oil (190C) 7 to 9 min each portion or until golden brown and crisp.
2. Add polenta fries to a wide bowl, add truffle oil and gently mix.
3. Serve immediately and add some parmesan cheese on top
